Artichoke, chicken & lemon linguine

Method

  1. Heat 1 tbsp olive oil in a large frying pan. Tip in the onions and chilli flakes. Fry for about 10 minutes, until soft and golden.
  2. Meanwhile, cook the linguine following the packet instructions, keeping a little of the cooking liquid at the end.
  3. Add the chicken to the onion and chilli mix and fry until cooked through. Stir in the artichokes, lemon juice, a pinch of zest, parsley and the drained pasta. Give everything a good toss, adding a few tbsp of reserved cooking water and some seasoning.

    Lovely fresh and easy dish, great for weeknights. Making it again for the second time tonight and the only thing I'm changing is to add a bit more lemon - other than that I can't fault it.

    Made this dish for lunch, and it was great - and so easy.. I took out the boiling water and added a cup of cream, along with a handful of basil - will definetely make this dish again!

    Very quick, easy and yummy ...what more could you ask for. I didn't have any artichokes in, so instead I fried some mushrooms in garlic and a little butter and added them instead. Delicious!!!

    I cooked the onions with sliced green pepper and 2 pinches of chilli, removed these from pan to cook chicken, (found that chicken cooks better when not with the onions), added the onions back to pan with chicken and added the cooked (separate pan) mushrooms, heated this through while linguine was cooking. Used a mug of the linguine liquid to the meat etc., and cream, did not add the lemon juice, mixed all together in pan and served with lemon zest, which was REALLY great. Wife was happy (unusual??!!), and I loved this. (Sorry about the novel-length comment, but I really enjoyed this recipe).

    Gorgeous and smiple to prepare. I add a little garlic once the onions are almost soft (never add garlic and onions together, by the time the onion is soft the garlic will be overcooked!) and use the oil the artichokes come in, rather than bland oil. Absolutely worth trying with thigh meat, just up the acid content (try capers!) to balance out the slightly fattier flavour.
