Lemongrass beef skewers with pickled carrot & noodle salad
Just because it's an after-work supper, it can still look good, as this stylish dish shows

- Mix the lemongrass, chilli sauce, the juice of 1/2 a lime, 1 tsp of oil and some seasoning in a bowl. Tip in the beef strips and stir.
- Cook the rice noodles following the packet instructions, rinse with cold water and drain thoroughly. Mix the sugar and fish sauce with the juice of 1 lime. Add the onion, carrots and noodles and leave to rest while you cook the beef.
- Thread the beef strips onto skewers and griddle or grill for 3-5 minutes or until cooked to your liking, turning frequently. Mix the mint into the noodle salad and serve alongside the beef skewers with a wedge of lime.

- 1 stalk lemongrass , thick outer leaves removed, finely chopped
- 1 tbsp sweet chilli sauce
- 2 limes
- vegetable oil
- 250g beef fillet or sirloin steak, trimmed of fat and thinly sliced
- 100g rice vermicelli noodles
- 2 tsp golden caster sugar
- 1 tbsp fish sauce
- ½ small red onion , thinly sliced
- 2 small carrots , peeled and cut into ribbons with peeler
- handful mint , roughly chopped
