Storecupboard pasta salad

This pasta salad makes a quick and healthy lunch, or is perfect prepared ahead for a picnic or lunchbox

Method

  1. Mix the onion, capers, pesto and oil. Flake the tuna into a bowl with the pasta and tomatoes, then stir in the pesto mix.

Make it for kids

Mix together 1 tbsp pesto with 2 tbsp mayo. Stir through 100g cooked pasta along with 100g sweetcorn, 185g can drained, flaked tuna and 1 chopped tomato.

Dress it up - Griddled tuna salad

Mix 200g leftover pasta with juice ½ lemon, bunch chopped parsley, 3 tbsp extra virgin olive oil, 2 chopped spring onions, 1 tbsp drained capers and a handful toasted pine nuts. Brush 2 tuna steaks with olive oil, griddle for 2 mins each side, then cut into slices. Toss through the pasta to serve.

    Made this for 2 packed lunches but really the amounts were only enough for one decent portion. Tasted good, but despite using 2-3tbsp of pesto it was still rather dry.

    Agree with comment above - tastes nice, but despite large quantities of pesto and extra oil added, was still really dry. The tuna just seems to soak up the oil, leaving none to coat the pasta.

    Forgot the capers and had to use a small can of pink salmon instead of tuna as that's all I had, but it's very tasty - v easy lunch!

    Love it! Used sundried tomato pesto and it was still great! Agree with the others too, add a bit more olive oil and normal pesto and sundried tomato pesto and it's perfect. The capers were such a tasty addition, I had never actually used them and was a bit worried, but it was delicious! Plus, it's easy to double the quantities.

    Love this - so tasty. I added mayo just so it wasn't too dry. Also made the kid friendly one for my son and his friend - didn't go down very well at all.

    Really nice recipe. Made it without the Tuna, Capers and tomatoes just because i didn't have them at the time but it was still really tasty and if i had used tuna would probably be even better.

    Great recipe, and so quick to put together for lunch. I added a can of mixed beans to beef it up and more pesto and lemon. yum yum!

    Quick to make and like a few have mentioned, I did add another tbsp of olive oil and pesto. Bit on the dry side despite adding the extra, feel its missing something! maybe add some black olives or feta, not sure but needs zinging up!

    Anybody got any ideas what I could add to this instead of tuna? I'm veggie, so would like to add an alternative source of protein - maybe roast marinated tofu?
