Mash doesn't have to be all about potatoes. This superhealthy side adds swede and carrots to the mix for a veggie treat

Method

  1. Place the potatoes, swede and carrots in a large pan of salted water. Bring to the boil and cook for 20-25 mins until tender. Drain and mash with a potato masher. Add the butter and a generous amount of seasoning.

    I made this for Sunday dinner and it was delicious! Even my husband enjoyed it and he doesn't like vegetables. We had it this time with roast pork but I'm thinking that it will be wonderful with our Thanksgiving turkey later this year. I'm not sure what a swede is but I'm thinking it's like a turnip, so I substituted the largest turnip I could find.
