Quick tomato soup with cheesy garlic dippers

Everyone needs a trusty tomato soup recipe - and this one costs less than a pound per serving

Method

  1. Put the tomatoes, sugar, stock and sauces into a medium pan with some salt and pepper. Bring to a simmer and cook for 5-10 mins. Stir in the mascarpone and blend to a smooth soup. Return to the pan and keep warm while you make the dippers.
  2. Heat the grill to high and toast the ciabatta until golden. Rub with the garlic, season, then top with the cheese and grill until melted and golden. Slice into fingers and serve with the soup, sprinkled with the basil, if using.

Use up mascarpone: Pea & mint pasta for 2

Cook 200g/7oz pasta following pack instructions, adding 140g/5oz frozen peas for the final 3 mins of cooking time. Drain, reserving 2 tbsp of the cooking water, and tip back into the pan with 100g/4oz mascarpone, a handful chopped mint, reserved cooking water and some seasoning. Mix well.

    Quality! A really rich, creamy, smooth flavour! I think the mascarpone cheese really makes this! Cooked it last week and cooking it again tonight! Does serve 2, but not massive portions, definitely need the bread dippers or something to go with it.

    Agree with the other comments. This soup is so easy to make but tastes amazing, really creamy. Also agree that the portion size for 2 is not massive. I've made this three times now and don't bother with the dippers I just have some nice bread and butter. Would highly recommend this recipe.

    This only took 5 minutes to make and a fantastic result! I used a 680g jar of passata instead of tinned tomatoes and so didn't even have to blitz it. Highly recommended.

    Without a doubt the best tomato soup I have tasted and unbelievably easy! Mascarpone adds a great creamy flavour. Had to double the quantities to serve 2 though.

    made this today but doubled up on everything...... fed 2 adults and 2 young children today and theres a portion left for my partners lunch tommorow! was very nice even my youngest loved it just served with crusty buttered bread :)

    This is a gorgeous soup! My 8 yr old boy always ask's when I will be making it again. As the mascapone is quite high in fat has anyone found a lower fat alternative?

    This soup is great for when you want something fresh and home-made but are short on time. It takes 10 minutes to get on the table and couldn't be easier. I do however add less sugar as I find it too sweet otherwise.

  • 400g can cherry tomatoes
  • 1 tbsp caster sugar
  • 100ml vegetable stock
  • dash each Tabasco and Worcestershire sauce
  • 2 tbsp mascarpone
  • few torn basil leaves (optional)

  • 1 medium ciabatta roll, halved
  • 1 garlic clove , halved
  • 125g ball mozzarella cheese, shredded
