Vanilla custard

John Torode's simple vanilla custard is a must-have indulgent addition to any pudding

Method

  1. Heat the milk in the saucepan until it comes just up to the boil, then take off the heat immediately. In a bowl, beat together the egg yolks, vanilla sugar and flours. Pour the milk slowly over the egg mix, beating well.
  2. Return the mixture to the pan and place over a low heat, stirring for 8-10 mins until the mixture begins to thicken. Remove and serve with the dumplings.

    Delicious! Best custard I've tried. I halved the recipe and used soya milk and it was spot on!

    This recipe is so quick and so easy!!! I made the ingredients smaller so it would be enough for 3 portions, and it literally took me 5mins!! Will be definately making again

    I make this in the microwave. It means that the milk does not get a burnt taste. You have to keep an eye on it so the milk does not boil over. And you have to take it out quite a few times to stir it. It gets an amazing fluffy delicious texture. Takes about 5 minutes with the ingredients divided in half.

    First timer for custard, this recipe was extremely easy to follow and I will never eat packet custard again, absolutely gorgeous, I halved the recipe as a smaller family might not want to make quite so much.

    Avaleurs - Scrape the vanilla seeds from a pod, add 2 cups of sugar and seal in an airtight jar for 2 weeks for the flavour to develop.
