Fried new potatoes with Parma ham & broad beans

Method

  1. Simmer the broad beans for 4 minutes, drain, cool and peel off the grey skins. Heat a little oil and butter in a frying pan and fry the potatoes until they are really brown and crisp, add the broad beans, Parma ham, parsley, season well and toss.
  2. Sprinkle with sherry vinegar.

    This dish tasted great, but I did need to change the Parma ham for bacon, as that is all I had in the cupboards. Also I left the skins on the broad beans as they always taste better, plus less work :-D If you don't have any sherry vinegar I used dry sherry, and that was fine. Not sure on the size, as it wasn't very much for two adults, perhaps next time some more potatoes, and maybe a leek/onion would be an interesting mix. Still a dish which disappeared very quickly :-)

    I just love the summer. Even more so for the broad beans!! This recipe has a lovely combination of flavour and textures. I Served it with steamed white fish. I also boiled the potatoes a bit beforehand to reduce the frying time and oil quantity, for a healthier version. Enjoy!

    Light, summery and really easy to make. Especially good with home grown potatoes and broad beans if you have them. If I made it again I would definitely increase the parma ham slices to 4, as 2 just wasn't enough!

    As I live in Spain I used Iberico Ham 4 slices, used baby broad beans left skins on, crushed pots and grated Manchego cheese on top. Served it as part of a tapas lunch. Went down a treat by everyone. Next time I made it poured some bravo sauce over pots and put under grill until cheese melted. Both versions very tasty. Broad beans just in our markets now so I leave the beans in their pods now as they are so tender. Use them in a stir fry as I have never in 10 years seen any mange tout peas. Can't have everything.
