Moroccan meatballs with herb couscous

If you usually serve meatballs with spaghetti, try this Moroccan version with couscous for a casual dinner party

Method

  1. Put the lamb, onion, half the garlic, half the ginger and half the spices in a bowl and season well. Mix (clean hands are best) and form into little meatballs (you'll make around 30).
  2. Heat 1 tbsp olive oil in a large non-stick pan and add the meatballs in batches, frying until browned all over. Scoop out, then add the rest of the garlic, ginger and spices and cook for 2 minutes. Add the tomatoes and stock and season. Simmer for 10 minutes, then add back the meatballs and cook for another 20 minutes until sauce is thickened. Stir in the coriander.
  3. To make the couscous put in a bowl with the butter and some seasoning. Pour over the chicken stock and cover with clingfilm. Leave for 10 minutes. Stir the herbs through and serve with meatballs.

    A definite family favourite. I add a lot more garlic and ginger, and only one tin of tomatoes. I also use a mix of mince, usually pork and veal. The meatballs taste better the next day - problem is, there are not often a lot of meatballs left. Also good cold/warm in a toasted pita bread.

    I've made this a few times and it always goes down very well, I fry off some courgettes and add them to the cous cous, they taste fab and go well with the rest of the dish.

    Absolutely amazing! I have made this a couple of times now and everyone that has tried it has adored it. I tend to use lean beef mince instead of lamb because I am not a fan of lamb but follow the rest of the recipe. Just back from a 'taster' session at slimming world and this went down a storm. All I had to do was change the meat for EXTRA lean mince and fry light instead of oil! Fantastic and filling meal :)

    My girlfriends came for supper when I made this and it went down a treat! The whole receipe was delicious. I used half beef and half lamb and just added a little more cumin and chilli - perfect :-)

    This was lovely. For some reason my sauce was fairly 'soupy' but very tasty all the same. The cous cous was really nice. My hubby doesn't like cous cous usually but he really liked this version.

    Added a little cumin, cinnamon, coriander, lemon zest, few sprigs of thyme. Served with a herby cous cous and all I can say is Yum !

  • 200g couscous
  • 50g butter
  • 350ml chicken stock , boiling
  • ½ bunch coriander , chopped
  • ½ bunch parsley , chopped
