Moroccan meatballs with herb couscous

If you usually serve meatballs with spaghetti, try this Moroccan version with couscous for a casual dinner party

Method

  1. Put the lamb, onion, half the garlic, half the ginger and half the spices in a bowl and season well. Mix (clean hands are best) and form into little meatballs (you'll make around 30).
  2. Heat 1 tbsp olive oil in a large non-stick pan and add the meatballs in batches, frying until browned all over. Scoop out, then add the rest of the garlic, ginger and spices and cook for 2 minutes. Add the tomatoes and stock and season. Simmer for 10 minutes, then add back the meatballs and cook for another 20 minutes until sauce is thickened. Stir in the coriander.
  3. To make the couscous put in a bowl with the butter and some seasoning. Pour over the chicken stock and cover with clingfilm. Leave for 10 minutes. Stir the herbs through and serve with meatballs.

    I made the recipe exactly as it said and found it very easy. The result was very special, full of wonderful flavours and everyone loved it. Will definitely make this again. My brother-in-law complains about everthing. And he just said you did not make eough.......so big his with him

    I made this with pork mince, added them to the sauce and finished off in the oven. Served with Spanish Potatoes.... and was scrumptious! Will definitely be making this again.... and again!!

    Tried this for the first time on Friday evening, made the meatballs and tomato sauce the day before and just brought them together on the Friday evening. We all enjoyed this, my boys did not really enjoy the herb cous cous, I thought it soaked up the sauce really well. Might try the meatballs with spagetti next time to please the whole crowd.

    Made this when friends were coming round. Gorgeous and simple once you've messed around with making the meatballs. I added a heaped tsp of harissa paste to the sauce for an added kick and served with the cous cous, flat bread and dips. Give it a go, it's lovely!

    I made these with beef and bunged all the meatball ingredients in the food processor as oppossed to grating the onion etc. I think they could benefit from a little more heat so would include some red chilli next time and also "up" the moroccan flavours.

  • 200g couscous

  • ½ bunch coriander , chopped
