Moroccan meatballs with herb couscous

If you usually serve meatballs with spaghetti, try this Moroccan version with couscous for a casual dinner party

Method

  1. Put the lamb, onion, half the garlic, half the ginger and half the spices in a bowl and season well. Mix (clean hands are best) and form into little meatballs (you'll make around 30).
  2. Heat 1 tbsp olive oil in a large non-stick pan and add the meatballs in batches, frying until browned all over. Scoop out, then add the rest of the garlic, ginger and spices and cook for 2 minutes. Add the tomatoes and stock and season. Simmer for 10 minutes, then add back the meatballs and cook for another 20 minutes until sauce is thickened. Stir in the coriander.
  3. To make the couscous put in a bowl with the butter and some seasoning. Pour over the chicken stock and cover with clingfilm. Leave for 10 minutes. Stir the herbs through and serve with meatballs.

    Well, I've cooked this a couple of times now and have to say what a fabulous combination of flavours! Like many other contributors I made them with beef because I had it handy and everything else is usually in the store cupboard. The lightness of the meatballs is quite divine and is wonderfully enhanced by fresh coriander. The dish also seems to lose very litttle by being frozen. I used a very generous 'pinch' of crushed chillis rather than chilli powder and have also enjoyed them served over pasta. Great with a morroccan style salad on the side. Good enough to serve to guests!

    Oh my gosh, absolutely divine. I made with pork mince (purely because it's cheaper) and halved the amount of tinned tomatoes and I thought that was the perfect amount of sauce. I never make couscous so was glad to find an exciting recipe with it in. Will definitely make again.

    Delishhhhhh...... Lovely dish, lots of flavours husband Absolutely loved it, will be making again Used fresh chilli as can never find dried chilli flakes... Used beef mince will try Lamb next time............ummmmmm

    Cooked this for my in-laws and husband - it was very tasty indeed and we all really enjoyed it. Substituted the lamb with beef mince to reduce the calorie content - and it worked very well. My mother-in-law even took the recipe and cooked it a week later for guests.

    Made this last night, I used beef mince instead of lamb and made the meatballs a couple of hours earlier putting them in the fridge to firm up. It turned out good my only gripe is it tasted quite sweet so next time I would add some fresh chilli and some salt as I'm not a big fan of sweet tasting meat dishes. Overall though an easy and filling dinner. For the couscous I put 200g in a bowl then poured over 250ml of chicken stock with a tsp of Harissa mixed in, covered and let that steam then when everything was ready to go I added a glug of olive oil, the juice of a lemon and some fresh coriander, delicious.
