Moroccan meatballs with herb couscous

If you usually serve meatballs with spaghetti, try this Moroccan version with couscous for a casual dinner party

Method

  1. Put the lamb, onion, half the garlic, half the ginger and half the spices in a bowl and season well. Mix (clean hands are best) and form into little meatballs (you'll make around 30).
  2. Heat 1 tbsp olive oil in a large non-stick pan and add the meatballs in batches, frying until browned all over. Scoop out, then add the rest of the garlic, ginger and spices and cook for 2 minutes. Add the tomatoes and stock and season. Simmer for 10 minutes, then add back the meatballs and cook for another 20 minutes until sauce is thickened. Stir in the coriander.
  3. To make the couscous put in a bowl with the butter and some seasoning. Pour over the chicken stock and cover with clingfilm. Leave for 10 minutes. Stir the herbs through and serve with meatballs.

    Really tasty, and a hit with everyone, but I would recommend that you test a sample before committing to frying the whole batch as I found that I needed to double the spices in the meat and season with salt to bring out the full richness of the meaballs. Same applies to the sauce, it needed sugar to balance the sharpness. I also added stock cubes rather than stock so it wouldn't be overly wet and need lots of reducing. I bulked it out with cubes of oven roasted butternut squash, that went really well with the dish. Served with mash, and fine green beans.... will be making it again for sure!

    I did this with ready made meatballs as we had some and I wanted to use them up. Added a jar of Harissa paste to add to the flavour and it was absolutely lovely, clean plates all round! Although if I was feeding 4 there would not have been enough couscous! So very easy too!

    We loved this and my family has asked for a repeat performance!No couscous for us - I served the meatballs and sauce with spaghetti and a crunchy green salad on the side. Definitely one to add to my list of weekday winners. Recommend you try it (and the whole plum toms, broken up a bit, do make a difference to the texture of the sauce - better than a tin of chopped toms...). Delish!

    Just made this for our lunch, really really tasty, my husband and I are usually that not keen on couscous but loved this recipe and it definitely goes with the meatballs! we had sour cream on the side, yummy! many thanks.

    Fantastic recipe and is now a regular in our family meals. Ive made this 3 times now with lamb and with beef both equally as good, each time it gets better. I now double the spices and add lime juice to the cous cous. Will be making again and again.

    Made this for 2. Didn't have enough lamb mince so used beef and it was still very nice. Only criticism would be that there wasn't enough liquid on the couscous, and it tasted very bland. That said, it tasted fine mixed into the meatball sauce. I used much more than a pinch of chilli flakes as we love hot food.

    Fantastic recipe! The only gripe my family had with it was that I didn't make enough! For the sauce, I used lamb stock instead of chicken as this made more sense to me. But I did use chicken for the couscous. The butter really saved the couscous as it can sometimes come out dry. I didn't use any coriander as I didn't have any about. Will definitely make this a part of my regular repertoire and will make multiple batches at once and then freeze for a quick and easy mid-week dinner.

    The flavours combine really well in this dish and its great to be able to put a twist on a traditional favourite in my family (meatballs). I copied the recipe almost exactly, subbing the couscous with Quinoa as I require a gluten free diet. It was all sublime. Will definitely make again.

    A really nice, easy dish. With the couscous we swapped the coriander for mint and added raisins. We also messed about a bit with the spices in the sauce and added more garlic. I think it's a recipe that might need a bit of tweaking for your own tastes, but definitely delicious once you get there.
