Indonesian noodle salad

A speedy noodle dish that's low fat and perfect for a midweek meal, as there's barely any cooking involved

Method

  1. Cook the noodles in boiling water until just tender. Drain and arrange on a platter. Top with cucumber, pepper and onion. Drizzle over the ketjap manis and squeeze over the lime.
  2. Sprinkle over the chopped nuts and top with egg halves.

    This was quite plain and unappetising. The picture looks fabulous, but the taste doesn't match the photo. I won't be making this one again.

    I've made this many times since I discovered it! My cucumber disliking family scoff it all. It's a great mid-week quickie or as a side dish. I add finely sliced red chilli. The roasted peanuts are key - over roasting is a no-no, trust me! I've made it as a side dish to baked sea bass with lemongrass & ginger (http://www.bbcgoodfood.com/recipes/2266/baked-sea-bass-with-lemongrass-and-ginger). Yummy :)

    This was very nice. I also used a small chicken breast covered in the Kecap Manis each.

  • 100g medium egg noodles
  • ½ small cucumber , cut into batons
  • 1 red or yellow pepper , sliced, or a mix of each
  • ¼ red onion , cut into slices
  • 2 eggs , soft boiled and halved
  • 4 tbsp ketjap (Kecap) manis (Indonesian sweet soy) , find it in the Asian section of supermarkets
  • 1 lime , halved
  • 1 tbsp roasted peanuts , chopped
