One-pot fish with black olives & tomatoes

Five minutes on the hob, 15 minutes in the oven, this tasty fish dish is one-pot cooking at its best

Method

  1. Preheat the oven to fan 180C/conventional 200C/gas 6. Heat 1 tbsp of the oil from the olives in an ovenproof pan. Tip in the onion and stir well, leave to cook for a minute or two and then give it another good stir. Add the tomatoes and some salt and pepper. Bring to the boil, then add the olives.
  2. Put the fish, skin side down, onto the sauce and drizzle over a splash more oil from the olive jar. Bake, uncovered, for 15 minutes until the fish is cooked. Sprinkle with chopped parsley and serve straight from the pan, with lemon wedges for squeezing over.

Spicing it up

If you like your food spicy, add a small pinch of red chilli flakes to the onion. A handful of quartered artichoke hearts from a jar can be added as well as, or instead of, the olives.

    Fantastic fish dish, I included 2 cloves of garlic with the onions and used Monk fish (extravagant but very meaty fish).

    Very quick & easy to make- a good, warming mid-week meal. Would be nice served with crusty bread. I added a generous sprinkling of chilli flakes & some dried herbs & didn't find it bland. Will make again.

    Very easy. Made this with olives and some leftover roasted artichoke. It was very tasty, not bland at all as some have commented. And the overall taste of the sauce really goes well with the fish. But next time I'll use double the fish specified as the amount of fish was too little for me.

    ok try this dish with home made garlic bread. turn on the oven then split some part baked rolls and spread some home made parsley and garlic butter inside cook as requested and serve with this dish. it fits well with this dish. some may like it some may not. but i loved it.

    This was yummy, but it definitely needed a few additions. I added garlic with the onion, zucchini with the olives and stirred through fresh basil at the end. Fresh lemon and a drizzle of olive oil over the fish before serving too. Served with mash and a side salad. Very tasty and looked beautiful in the pot.

    was ok, but added garlic to the onions. next time would add anchovies to the tomatoes or a few chunks of spicy chorritzo sausage to create a richer flavour.
