Sticky chocolate drop cakes

This easy-to-make bake will keep somewhere cool in an airtight tin for up to two days

Method

  1. Butter and line a traybake or small roasting tin, about 20 x 30cm. Heat oven to 180C/160C fan/gas 4. Gently melt the butter in a large saucepan, cool for 5 mins, add sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour, cocoa and ¼ tsp salt. Stir in the milk chocolate drops and bake for 35 mins until risen all over and a skewer comes out with a few damp crumbs.
  2. For the top, gently heat 85g butter and 85g caster sugar together until both are melted. Stir in 200g light condensed milk and bring to a boil. Cool for 5 mins, then stir in 50g milk chocolate drops to melt. Spread over the cold cake, scatter with more chocolate drops and cut into squares.

    started to burn around edges so next time i would lower heat slightly, the topping was very runny so i placed in the fridge for a while to thicken up, which it did but not as much as i would have liked it to, i also sliced the cake in half and added jam so it wasnt so dry, very nice but sweet and fattening !

    Really nice chocolate cake recipe. Don't be scared by comments about the icing - it works perfectly and tastes great. You just need to keep an eye on the condensed milk and sugar mix while bringing it to the boil, stirring constantly. Make sure you slowly bring it to a hard boil, and continue to boil it for a minute or so, in order for it to thicken up before adding the chocolate.

    I didnt read the istuctions propperly an just threw all the ingreadents for the base in at once on to the melted butter , still turnned out perfect :) plus i used milkyway stars instead of choc drops . Possibly the sweetest thing i have ever eaten. 5/5

    Fab cake, I used a x 20cm square and it worked well, I did not have condensed milk so I used 1/2 a can of nestle caramel and it worked really well. I also used dark chocolate drops (53%), reduced the sugar to 250g. My kids loved it. This is by far my favourite chocolate cake.

    this is an easy recipe if a little strange but it always turns out lovely...haven't made topping yet, just used chocolate icing and it was lovely and moist..will make again.

    I forgot to mix in the chocolate drops! I am not sure if this is the reasn that the cake is a bit dry. But my son just loves it as it is. Will definitely try the recipe again, and try not to forget the chocolate chip this time ;)

  • 300g golden caster sugar
  • 1 tsp vanilla extract
