Method

  1. Rub each potato with a little oil and salt, then wrap in a double layer of foil.

  2. As soon as the barbecue coals are glowing red, put the potatoes directly on them. Cook for 15 mins, turn with tongs, then cook for 15 mins more. Remove one, unwrap and check it is cooked through.

  3. Peel back the top of the foil from each potato, split open and top with a spoonful of yogurt and a few spring onion slices.

Sweet potatoes are divine and this is a great recipe. Take the salt easy but it would need a little - maybe the same as you do when baking potatoes. And yes, you can do sweet potatoes in the oven too. It's brilliant along with the Sunday Roast for those you don't like roasted potatoes.

I do not do Barbeques so would this recipe be ok in the oven? Never baked sweet potatoes before so don't want to make a mess of it

Added a few chives along with the spring onion and used half fat crème fraiche. Went down a treat, everyone loved them, even those who thought they didn’t like sweet potatoes. Although the skins are a little too salty for my taste, so next time I’ll try without the salt and run the risk of the skins not being crispy.
