Spiced red lentil soup

Method

  1. Fry the onion in 1 tbsp olive oil until soft. Stir in the red Thai curry paste, depending how hot you want it.
  2. Add red lentils and mix to coat in the paste. Pour over vegetable stock and simmer for 20 mins until the lentils are tender.
  3. Blend with coconut milk and reheat if needed. Serve scattered with chopped spring onions, if you like.

    one of the quickest soups to make, fab flavour (and a great way of getting lentils into your diet if you don't like them!). Definitely worthy of 5 stars.

    I really loved this recipe. It was very simple and tasty - even my other half (who says he really dislikes lentils) thought it was tasty. I think the little scattering of tangy spring onions on top is a great extra too - works really well with the soups warm and rich flavour. And I'll definitely be making it again.

    Lovely! Perfect winter soup. I used green Thai paste as had no red paste, added canned butter beans for the last five mins, and didn't blend as don't have a blender. Tasted absolutely scrumptious. Wish I had some naan bread with it as that would have perfected the meal!

    This was delicious. Easy to make as well. Used Green paste as that is what I had and also didnt bother blending (too lazy!) It was great. Could it be frozen, before the cocnut cream is added? It would be good to make a big batch.

    This was really lovely, I added a tiny bit of salt to bring it all together. I also let it cool then reheated it and it got slightly thicker which I personally liked.

    Tried this once. It was fine. I think I will add a bit of lemon grass next time and a squeeze of lime to enrich the flavour. Still, love it for healthy option :)
