Oven-baked leek & bacon risotto

A one-pot risotto you don't need to stand over for half an hour? Got to be a midweek winner

Method

  1. Heat oven to 200C/180C fan/ gas 6. Tip the oil into an ovenproof casserole dish. Add bacon and fry for 2 mins. Add the leeks and cook until soft, but not coloured, for about 4-5 mins. Tip in rice and cook for 1 min more. Pour over stock. Cover and place in the oven for 20 mins, stirring halfway.
  2. When rice is just tender and all liquid is absorbed, remove from oven and stir in peas. Place back in oven for 2 mins more. Remove and stir in cheese. Add zest and season.

    We had this last week and it was so delicious that we're having it again tonight! It was really simple and so, so yummy that my husband had to persuade me not to eat all the leftovers then and there!

    Great meal, very very tasty and very easy! I added lemon juice rather than lemon zest, and we felt it lifted the dish. Also used creme fraiche rather than soft cheese.

    Wow, this is definitely a midweek winner! Quick and easy to prepare and it turned out perfect. I was worried the rice would stick to the bottom of the pan but it was fine. I used pancetta instead of bacon and I didn't have any soft cheese so used soured cream which worked fine. Amazing!

    This was really great. I added less soft cheese at the end as I didn't think it needed it and I didn't use lemon as I didn't have one. But still a really tasty dish. Will definitely make again.

    Maybe we have hearty appetites in this family, but if one of the four of us hadn't been suffering from a bad throat this would not have fed all of us. I will make again as it's so easy, but will add 100g of rice and more stock as it felt 'sticky' when eating. I used garlic and herb soft cheese which added to it, but overall I think I prefer the bacon and tomato rissotto which is oven baked on this site.

    This was a very tasty and easy risotto. I added chicken also which worked well, I used the juice of the lemon to marinate it so it fitted in well with the dish. Very chuffed and some very happy lads in my house.

    Nice and tasty, but I've never heard of making risotto without white wine or garlic so I added these, other than followed the recipe. But I agree this wouldn't feed 4! Also didn't use lemon and yes the tomato and bacon oven baked risotto is much nicer!

    Brilliant receipe, so easy and quick to do. Will definitely make this again. Will reduce the amount of soft cheese next time as it was quite creamy but thats more about personal taste.

    First time I had made a risotto, and was really pleased with how it turned out. Will maybe leave the cream cheese out next time though - didn't really need it.

    A really good really easy risotto, which can be difficult. I swapped the soft cheese for creme fraiche and added garlic and white wine as some others recommended, it was really nice. Definitely going to be made again. I added extra bacon and some extra vegetables and it fed 3 comfortably. Perhaps I'm just very greedy :)

    I never considered myself a risotto person, but this recipe has changed me. It is easy to make, does not require any shopping and leaves very little washing up. I will definitely make this again.

    Nice - easy to make - maybe not as creamy textured as making it properly. Used mascapone instead of the soft cheese. Only used 200g of rice for 2 and a half (baby daughter) people but seemed to need same amount of liquid...

    Delicious! This is really scrummy ... even though I forgot to put the cream cheese in! But I thought it was absolutely fine without it plus it saved on a few calories!! My kids loved it too : )

    This was delicious, I cooked it for my parents when they visited and they both enjoyed it too. As others have suggested i added garlic and white wine, I also doubled up on the ingredients, and I am glad I did as there were no leftovers after feeding 4 people.
