Jacket potatoes with home-baked beans

Method

  1. Heat oven to 200C/180C fan/gas 6. Scrub the potatoes and dry well, then prick in several places with a fork. Bake directly on the oven shelf for 1-1½ hrs, until they feel soft when squeezed.
  2. After 30 mins, heat the oil in a pan and gently cook the carrot and celery for 10 mins until softened. Add the beans, tomatoes and paprika and cook gently for a further 5 mins until the tomatoes are softened and pulpy. Stir in 100ml water and the Worcestershire sauce, cook for a further 5 mins then cover and keep warm.
  3. Split open the potatoes and spoon in the beans. Scatter with chives and serve.

The beans are great for making ahead and reheating in the microwave - spoon onto granary toast for a super-quick supper. Kids will love these Cowboy beans - as they're known in the US - with a handful of cheddar stirred through.

    I checked calorie content of ingredients as I was sure it amounted to more than your recipe stated, 81 calories in the beans and 128 in the potato which was very small and not a baking potato at all, excluding other ingredients, please be more accurate on your calorie counting for those of us on diets!!

    This was a delicious and healthy meal. It was delicious on the jacket potatoes, and equally for breakfast in the morning. I added about a quarter of a teaspoon of hot chilli powder to give it more of a kick ontop of smoked paprika to the quantity the recipe suggests. I added a tablespoon of tomato puree, and this enhanced the colour and flavour of the tomatoes which could be lost with all the other ingredients. It was quite watery at the end, so I thickened it with a paste made out of water and cornflour and this gave it the thickness as often associated with baked beans. I'll definitely be making this again! :)
