My Mums Orange Pud

Light sponge on top and gooey custard underneath. A good palette cleanser after a meal. Nice and light not to calorific. Try it with other juices

Method

  1. Heat the oven to 180c
  2. Beat together butter, sugar and zest. One at a time add juice, egg yolks, flour and milk mix until you have a smooth batter
  3. Whisk the egg whites until stiff, fold into batter, gently with a metal spoon.
  4. Pour batter into 4 or 6 depending on size, greased dishes and bake in a baking tray filled with enough hot water to come half way up the outside of the dishes. Bake for 25-30 minutes until lightly browned and set.
