Ingredients

  • 8 pork sausages
  • 600g sweet potatoes, cut into thin wedges
  • 1 tbsp olive oil
  • 2 tbsp wholegrain mustard
  • 3 tbsp clear honey
  • 200g bag baby spinach

For the dressing

  • 5 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 red onion, thinly sliced

Method

  1. Heat oven to 200C/180C fan/gas 6. Toss the sausages and potatoes in a roasting tin with the oil. Roast for 30 mins, then mix the mustard and honey together and stir into the tin. Roast for 10 mins more until sticky and cooked.
  2. Meanwhile, mix together the dressing ingredients with some seasoning – the onion will soften slightly in the vinegar.
  3. When the sausages are ready, thickly slice them, then mix back in with the potatoes. Tip the spinach onto plates, pile the sticky sausage slices and potatoes on top, then spoon over the dressing.

We love this in our house. I start the sausages first and add the potato (have also used butternut squash) after 15 minutes. I also add the onion, thickly sliced for 10 minutes before adding the mustard and honey. I don't bother with the dressing as there are enough juices and stickiness to put on the salad.

Such an easy dish to prepare and so cheap to buy ingredients. Definitely one of my 'go-to' meals.

good and simple...my husband asked - 'can we have it again soon?'

surprised how nice the dressing tasted, I have chopped onions rather than sliced - I was nice and soft!

going to try this tonight, will use chicken sausages and less honey as I am a slimming world member will check the syns but dont think it will be to bad if I reduce oil as well. Anyone else in slimming world tried this?

Liked the sausages and the mustard/honey combo. Cut the honey down based on other reviews but wished I hadn't as ended up with tangy sweet potato which was a bit strange! Also the sweet potatoes turned to mush so we ended up having sweet potato mash instead Would cut cooking time for it by about 15 mins or so next time.

Would definitely try again and play around with quantity of honey/mustard..

This is one of the best salads ever! I've made it for several people and it goes down a treat. I'm not a massive fan of raw onions so I tend to cook them down and then add them to the dressing and seems to work just as well.

What can I say; yum, yum, yum. I love the combo of sticky and sweet. What a quick and tasty dish. Will make again without question. I also would suggest good quality sausages.

Does anyone know if Venison Sausages would work with this dish as this would bring the fat content and calories down a lot?

Wasn't expecting this to be very special but in fact the dressing had much more of a kick to it than I thought it would and mellowed the raw onion taste just enough. And the sausages and potato were nice and crisp but not overly sweet. I'll be making this again soon I'm sure.

I made the mistake of trying to use this recipe as my work pack up for a week. It was ok, but when cold you realise how much fat comes out of the sausages - a lovely white residue on everything! The sweet potato was also a bit limp even when straight out of the oven, perhaps it was on too long. Very nice favours though. Next time i'll try it hot!
