Sticky sausage & sweet potato salad

A summery take on sausage and mash, this flavoursome meal makes a sweet and sticky treat

Method

  1. Heat oven to 200C/180C fan/gas 6. Toss the sausages and potatoes in a roasting tin with the oil. Roast for 30 mins, then mix the mustard and honey together and stir into the tin. Roast for 10 mins more until sticky and cooked.
  2. Meanwhile, mix together the dressing ingredients with some seasoning - the onion will soften slightly in the vinegar.
  3. When the sausages are ready, thickly slice them, then mix back in with the potatoes. Tip the spinach onto plates, pile the sticky sausage slices and potatoes on top, then spoon over the dressing.

    This was fast and delicious. Even the children enjoyed it (was worried they would find the mustard too strong). Nice to have a different way to serve sausages. Also enjoyed having a change from normal potato wedges.

    Very easy to do & tasty. I cooked the sweet potatoes for too long so they went a bit mushy but still tasted good.

    I cut down the honey and still found it a bit sweet, and I didn't add all the extra oil and no one felt it needed it. So overall tasty but could stand a little tweaking. :-)

    I made the mistake of trying to use this recipe as my work pack up for a week. It was ok, but when cold you realise how much fat comes out of the sausages - a lovely white residue on everything! The sweet potato was also a bit limp even when straight out of the oven, perhaps it was on too long. Very nice favours though. Next time i'll try it hot!

    Wasn't expecting this to be very special but in fact the dressing had much more of a kick to it than I thought it would and mellowed the raw onion taste just enough. And the sausages and potato were nice and crisp but not overly sweet. I'll be making this again soon I'm sure.

    This is one of the best salads ever! I've made it for several people and it goes down a treat. I'm not a massive fan of raw onions so I tend to cook them down and then add them to the dressing and seems to work just as well.

    Liked the sausages and the mustard/honey combo. Cut the honey down based on other reviews but wished I hadn't as ended up with tangy sweet potato which was a bit strange! Also the sweet potatoes turned to mush so we ended up having sweet potato mash instead Would cut cooking time for it by about 15 mins or so next time. Would definitely try again and play around with quantity of honey/mustard..
