Method

  1. Heat oven to 180C/160C fan/gas 4. Cream the butter and sugar together until well blended and smooth. Gradually beat in the banana, vanilla extract and egg. Add the zest. Mix well with a wooden spoon until thoroughly blended.
  2. In a large bowl, mix the flour, salt, baking powder, oats, coconut, walnuts and sultanas or chocolate chips. Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed. Line a baking sheet with parchment. Drop heaped tbsps onto the sheet, leaving a 5cm (2in) space around each one, and press down lightly. Bake for 15-20 mins until lightly browned. Cool.

    Mine were more rock cake than cookie, definitely would flatten them out next time. Bit crumbley but the children really enjoyed them :)

    surprisingly nice.. used 50g stork and 50g butter to make even healthier... maybe a bit cakey rather than cookie but perhaps this was because i didnt have the coconut... will try again :)

    The only reason I marked it down was because I felt that the mixture didn't stretch as far as stated. Otherwise very nice cookies - though I decided to take out the salt and baking powder as I felt it unnecessary. I will definitely be making them again! :D

    Just made these this eve, kids n hubby loved them. Left out the orange zest n think they needed it or maybe some mixed spice which was suggested by others. Substituted walnuts for peanut butter chips and they were scrummy. Will def be making them again, they just need a bit of tweaking on flavour.

    Absolutely lovely biscuits, but I'd be wary of calling them 'super healthy'. With 5g of saturated fat per biscuit that's a quarter of your daily allowence! I made them with Flora Light and it worked really well, whilst also reducing the fat content. I've also tried them with lemon zest rather than orange, which was lovely, or using no zest at all and adding vanilla essence instead!

    re healthy claim - of course its not great, biscuits need fat and sugar to be biscuits, but I've just compared these to our fave oaty biscuits, the blueberry and pecan ones on this site, and these are much better. Mind you, I make far smaller biscuits and find thats also a big help and our usual recipe we split in two logs and freeze one for later. Anyway, I'm giving these a go, cranberry and orange with a pinch of cinnamon to make it christmassy.

    I agree with the above comment, surprisingly not heavy at all! I was short on supplies so unfortunately mine had no nuts, plain flour and I used 60g of chopped dried dates instead of sultanas but despite these are amazing and not overly sweet.

    I had no coconut or walnuts so put in extra choc chips and some mixed nuts, lovely but wouldn't describe them as superhealthy!

    Didn't make any alterations to the recipe and I used sultanas rather than choc chips. I think my oven was a little too hot as had to cover them with silver foil mid way through cooking so they didn't get too brown. Tasted good none the less!

    Made these biscuits because I had a very ripe banana and a fresh coconut that my son won at a playgroup funday!! My son wasnt mad on raw coconut so these were ideal!! I didnt have hazlenuts so put in ground almonds instead. Didnt have orange so added squeeze lemon juice and had to use plain flour. I put half choc chips and half raisins and found this was enough chocolate to give it that naughty edge. Was really pleased with them although I too didnt flatten them enough so only ended up with 11 and were a bit thick and cakey but I liked them like that! Very good easy recipe. Unfortunately my sons in hip spica so couldnt join in but Im sure hell enjoy making them as well as eating them next time!

    Have just made these cookies and was surprised how lovely and moist they were, maybe because I put two rather ripe bananas in rather than just the 50g as the recipe says, hate food going to waste so took the risk and it paid off, I also used the zest of a whole orange will try lemon next time for extra zing, I flattened my biscuits but will flatten more next time as they don't spread at all , I also found they took longer to cook but that may be my oven, will certainly do again using different ingredients.
