The Best Veggie Baked Chilli

The vegetarian / vegan bean chilli that has meat eaters asking for seconds! I am putting this recipe up because anyone that has tasted this has asked me for the recipe, so I would like to share.

Method

  1. Heat oven to 180c
  2. Very finely chop carrots, celery, garlic and onions, if you have a blender use that, otherwise grate them. This step is important as it creates the thick consistency you get from a meat chilli
  3. Heat oil in casserole on the hob and fry the above ingredients on a medium heat for 5 minutes or until it softens and the onions look translucent. Then add peppers and cook for a further 3 minutes until they soften.
  4. Add the tomato puree, pepper and smoked paprika stir and cook for another minute
  5. Add the beans, chopped tomatoes and sugar, wine, chocolate and stock cube
  6. Bring to the boil stirring to ensure all the ingredient blend
  7. Transfer to the oven and bake with the lid on for 1.5-2 hours stirring occasionally and adding a bit of boiling water water if it seems to dry out
  8. If you are not a vegan, this is great served with nachos naked with mozzarella and served with guacamole as per the photo. If you are a vegan, or don't like the sound of that, it is also lovely with rice

    someone has a lot of time on their hands. Sorry if I've offended anyone, but paprika is actually a form of dried chilli and it does make this dish hot. http://en.wikipedia.org/wiki/Paprika If you like it hotter - add paprika

  • Ingredients
  • 3 Peppers (one of each colour) cut into 2cm squares (could also used frozen chopped peppers if you prefer)
  • 2 Carrots-peeled
  • 2 Sticks of celery
  • 2 Medium red onions
  • 2 Cloves of garlic
  • Tomato Puree (1 small tin)
  • Tinned chopped tomatoes (800g - 2 tins)
  • Kidney beans -rinsed (400g- 1 tin)
  • Black eyed beans-rinsed (400g- 1 tin)
  • Haricot bean-rinsed (400g- 1 tin)
  • Chocolate Dark (4 squares, the higher cocoa % the better)
  • 1/4 to 1/3 of a bottle of red wine
  • 1 Stock cube, veggie
  • 2 teaspoons of smoked paprika (it has to be smoked or it will taste rubbish)
  • Pinch of pepper
  • 4 table spoons olive oil
  • 1tsp sugar
  • You will need a large casserole dish you can use on the hob
