Balsamic blueberries with vanilla ice cream

Poaching blueberries really brings out their flavour, especially with a dash of balsamic vinegar

Method

  1. Tip the blueberries into a pan with the sugar, vinegar and 1 tbsp water. Heat very gently for 1-2 mins until the berries soften, but don't burst. Set aside until ready to serve. Spoon over the ice cream and eat with crisp biscuits.

    So tasty - the balsamic smells a bit alarming when poaching but the vinegary smell dies down, leaving a lovely depth to the blueberry sweetness. I cooked them a few minutes longer than the recipe stated so they'd be soft enough to mash with a fork, to make a more liquidy ice cream sauce for my 2-year-old daughter. She loved it!

    Made this for dinner last night very easy & quick but seemd to end up with a bit too much liquid, may re think the method if I make it again, maybe cook to puree or omit water? Very tasty though
