Steak & ale pies with blue cheese crust

Take time out over the weekend to make these filling and utterly comforting dishes

Method

  1. Brown the meat in batches in a little oil in a casserole dish. Scoop out then brown the onions and mushrooms. Add the meat back to the pan then sprinkle over the flour and stir for a minute. Add the ale gradually then bring to a simmer, put on a lid and cook for 2 hours, or until tender. Cool a little.
  2. Roll out the pastry to 20p thickness. Dot the blue cheese all over one side then fold and roll out again so the cheese goes into the pastry.
  3. Heat the oven to 200C/fan 180C/gas 6. Tip the steak mix into 4 individual pie dishes. Top with the pastry, trim and brush with beaten egg. Make a hole in the top of each then bake for 25-30 minutes until puffed and golden.

    Call yourself a chef? those "burn patches" are from the cheese thats' been dotted in the pastry. People no longer want glossy images of fake food, I used to get annoyed because my food didn't look like the quality of the food in the pictures so imagine how pleased people will be when they produce something that looks the same as a professional.

    The very things that turned 5-star chef off, were what attracted me to this recipe. Ever wish you'd never stuck your head above the parapet, chef? Good honest food, authentic looking,just like the mess I make at home when I produce food,with love and crumbs, for my lot.

    A really tasty pie - good for winter. The blue cheese was a great addition. I used stout which was lovely. My only problem was the pastry sunk away from the edge of the pie dish but that was more to do with my technique than the recipie!

    This recipe went down a treat. I've made it twice, once with blue cheese, once without, and both are good. I found I needed far more seasoning than suggested and I did not have any dark ale, but found that a normal beer did the job. Yum!

    This was delicious. Used beef stock instead of ale and mixed blue cheese in at the end. It was really tasty. Will definitely be mixing this again. Thanks for the recipe.

    I halved the ingredients as i done this for a rare cosy night in with my wife. I added about 2 table spoons of plain flour where really it should have been just half. I kept the mix from boiling dry by adding more ale and then red wine! 2 hours simmering seems too long. After 1.5 hours I transferred to the dish for the baking stage with the pastry. Perfect with roasties.

    This pie was really lovely. It's quite rich with the blue cheese crust so I would say goes further than 4 but that depends who you're feeding and how hungry they are. Definitely worth a go.
