Tortellini in a pea broth

Method

  1. Heat the stock in a pan. Add the tortellini and cook until just tender, adding the peas for the last 2 minutes of cooking. Season then stir in the basil and lemon zest.
  2. Spoon into bowls and serve with crusty bread and a sprinkling of parmesan.

    I bought a packet of tortellini to have in the fridge having spotted this recipe thinking it sounded like a good storecupboard tea - tonight was a fridge/storecupboard night! I'll not be making it again, at least not with shop bought tortellini. I think this would be much better following a recipe for homemade tortellini which is then cooked in a broth. Very disappointing flavour. Wish I'd used the stock to make a simple clear soup of some sort instead.

    very very quick. Good storecupboard meal. Although the stock can be very salty so i'd perhaps suggest only using half a cube. also works with parsley as a substitute for the basil. I'm sure, as it says above, that it would be better with homemade tortellini but I don't have the time/ability to make my own, so i though the shop-bought works just fine. It really just depends on whether you like the taste of shop bought tortellini i reckon.

    Brilliant, quick, easy, and very satisfying. I am not sure how much parmesan the recipe requires, but as a cheesaholic, I use loads! The first time I made this I also had crusty bread to go along, but the tortellini makes the bread a bit redundant (still nice to have though, but not necessary).

  • ½ a small bunch basil , shredded
