Baked apples with crunchy tops

The pudding of childhoods! Give this favourite a lighter touch to make it even healthier

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Core each apple and score a ring around the middle to stop them exploding. Put them in a baking dish and divide the raisins or sultanas between the cavities. Put the oats in a bowl with the cinnamon and toss together. Drizzle the honey over the tops of the apples and sprinkle on the oats - the honey should help them stick. Dot some butter on top of each apple and bake for 30-40 minutes or until soft all the way through. Serve with low fat yogurt, fromage frais or crème fraîche.

WHY IT'S LIGHTER

Crumble toppings generally contain a lot of butter to make them stick together in clumps, and the ratio of fruit base to crumble top can make the recipe quite high in fat. By baking the apples whole and adding oats along with crumble flavours, you get the best of both worlds.

    Ok so I made this for the kids last night. I used two massive apples gifted by a friend from their garden. This was a mistake as they required about 4 times the cooking time stated. I allowed twice the time but it was not enough. I used lime juice to soak the raisins as that was all I had in. I added a dash of mixed spice onto the raisins instead of cinnamon. After I cored the apples I snapped off the base of the core and used it to plug the bottom of the apple. This allows you to cram the raisins in and keep them inside the apples during cooking. I also added 2 tea spoons of crushed mixed nuts for the topping. All in all it worked well but the inside was a little tough. Lesson learned use normal sized apples!
