Chocolate mousse with orange shortbreads

Method

  1. Melt the dark chocolate with double cream. Whip the egg whites to stiff, then whisk in the golden caster sugar till glossy. Stir a third of the meringue into the chocolate, then gently fold in the rest. Divide between pots and chill.
  2. Meanwhile rub the cubed butter into the icing sugar, plain flour, cornflour, ground almonds and orange zest. Stir in the orange blossom water and bring together to a dough. Roll out on a parchment-lined baking sheet and bake at 180C/fan 160C/gas 4 for 15-20 minutes until golden. Slice into fingers, cool then dust with icing sugar.

    Made this for Valentine's day. As my husband is not keen on dark chocolate I used half milk chocolate and it still came out really well (although a little sweeter). I also made it with dark chocolate and it was quite chocolately and rich, but very nice nonetheless! Very quick and easy to make for last minute dinner guests, especially if you use an electric whisk and stick it in the freezer to speed up the chilling time.

    Made this today for a girls get together tonight. I used 85% dark chocolate and it didn't work. It came out way too thick, am really disappointed. On a high note made the shortbread and that is delicious but quite hard to handle the dough!

    If you don't need the egg yolks for anything else, add them to the chocolate mixture before folding in the whites. It made mine really rich and velvety.

    Not made the mousse yet, but when I made the dough for the shortbreads it wasn't solid enough to roll and shape,so I put it in the fridge to firm up a bit. Might try and use less orange juice next time!

    this was great, really easy, quick mousse, especially using the electric whisk. purplelila, raw egg whites is what most mousse is made out of, what were you expecting???!!! The shortbread was also great, i used orange juice instead of orange flower water, and turned out really orangey and delicious! The dough is a bit gooey, but not too difficult to manage when dusted with a little extra flour for rolling it out! The combination of the two was fantastic!

    I've been searching for a really good chocolate mousse recipe for ages and this is it! I added the egg yolks to the chocolate mixture which added richness to the dish. The shortbread was also very lovely, did have to pop the dough in the fridge for a while as it was far too soft to roll initially, but it went down a storm!

    Love this mousse and it's become a regular dessert in our house. Keeps really well in the fridge for a few days too! I also put the egg yolks in the mix for added richness. Didn't make the shortbreads but instead used a Waitrose recipe for langue de chat biscuits, which are lighter and less rich but give a nice crunchy counterpoint to the rich smoothness of the mousse. Usually make it in coffee cups and put a few raspberries on the saucer too.

    I heated the cream in the microwave with the rind from a tangerine (had no oranges) and left it to infuse for 10 mins before taking it out and melting the chocolate in the cream. It gave the mousse a lovely orangey flavour. And I used the yolks too, just be careful not to add them to the chocolate when it is very hot or it will scramble!

    I've made this mousse without the shortbread but it's so quick and easy. I've tried it with both milk and dark chocolate and its worked really well. Everyone who has tasted it has given it 5 out of 5 - i have yet got to try and make the shortbread.

  • 150g dark chocolate
  • 100ml double cream
