Salt cod fritters

These tiny but tasty bites, traditionally from Portugal, make a great tapas-style starter or light lunch

Method

  1. Remove any skin and bone from the fish and flake it finely. Add the potato, vinegar, milk, onion, parsley and egg yolks. Season and mix well. Whisk the egg whites to soft peaks and fold into the mixture. Heat a saucepan one-third full of oil until a bit of bread sizzles and browns in a minute. Add the salt cod mixture in spoonfuls and fry until brown all over. Drain on kitchen paper.

  • 1 tbsp vinegar
