  • 2 mini heads cauliflower
  • 25g butter
  • 25g flour
  • 300ml milk
  • 200g cheddar, grated
  • parsley, chopped to serve

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Steam the mini heads of cauliflower until just tender. Melt the butter in a pan then stir in the flour and cook for a few minutes. Gradually add the milk to make a smooth sauce. Stir in the cheddar until melted. Place the cauliflower heads into small ovenproof dishes and pour over the sauce. Bake in the oven for 30 minutes until golden and bubbling. Sprinkle with parsley.

Hi, I have used this recipe for a while now, superb! I made this healthier by using skimmed milk and only 70g of cheese for both people, this worked fine. I seasoned well, a tip when adding the milk, only gradually put it in, so it goes like weetabix consistency.
