Cauli cheese

Surely this simple baked dish of creamy sauce and a mini head of cauliflower is the ultimate comfort food supper?

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Steam the mini heads of cauliflower until just tender. Melt the butter in a pan then stir in the flour and cook for a few minutes. Gradually add the milk to make a smooth sauce. Stir in the cheddar until melted. Place the cauliflower heads into small ovenproof dishes and pour over the sauce. Bake in the oven for 30 minutes until golden and bubbling. Sprinkle with parsley.

Courgette & cheese frittata

In a frying pan, cook 2 sliced courgettes and 1 sliced onion in a knob of butter until softened. Beat 4 eggs with 50g cheddar and season then add to the pan. Leave the eggs to set on the bottom then slide the pan under a hot grill and cook until set. Cut into wedges to serve.

Tuna cheese melts

Mix 1 tin of drained tuna with 2 tbsp mayonnaise, 2 chopped spring onions and season. Spread on 2 slices crusty bread, top with 50g grated cheddar then top with another 2 slices of bread. Melt butter in a pan and cook until golden. Carefully flip over, add more butter and cook until crisp and golden.

    Hi, I have used this recipe for a while now, superb! I made this healthier by using skimmed milk and only 70g of cheese for both people, this worked fine. I seasoned well, a tip when adding the milk, only gradually put it in, so it goes like weetabix consistency. GIVE IT A GO!
