Method

  1. Heat rice according to pack instructions. Put onion and sultanas in a bowl and pour on boiling water to cover. Leave to stand 1 min, then drain and stir in rice and carrot.
  2. Mix in the lemon zest and juice, honey and seasoning, then serve.

    Really nice! I used red rice instead of wild one and dried cranberries instead of raisins, everybody loved it!!

    I made this with a mixed wild rice and like lucy I added in dried cranberries with the sultanas. It was great, a really nice change with the harshness having been removed from the onions by the soaking. Will definitely make again
