Somerset stew with cheddar & parsley mash

This family winter warmer is full of flavour and goodness. Adapt for meat lovers by adding sausages

Method

  1. Heat oil in a large pan and fry the onion, garlic, carrot and leek until soft but not coloured. Add the tomato purée, chopped tomatoes, butter beans, flageolet beans, cider, stock and thyme and simmer for 15-20 mins until the stew has thickened and the veg are tender.
  2. Meanwhile, if you're adding sausages to any portion, snip each sausage into 3-4 chunks. Heat the olive oil in a frying pan and brown the chunks for 5 mins, then stir in appropriate portions of the stew and gently simmer for the remaining cooking time. Serve with the mash.
Try

Cheddar & parsley mash

Peel 850g potatoes, cut into chunks, and boil in salted water for 15 mins or so until tender. Drain, return to the pan and mash with a splash of milk, 25g butter, 75g extra-mature grated cheddar and a handful of chopped parsley. Season. If you like, put the mash in a heatproof dish, dot with butter and place under grill for a few mins for a golden and crisp finish.

    Sounds lovely but instead of using the beans i will use chunky veg (Marrow, pumpkin, squash and courgette) grown in our planting area in Somerset

    I really loved this recipe. I used cannelloni and butter beans and added a little paprika and it was delicious. I think this will be a winter favourite for me.

    Wasn't mad about this when I first made it as thought it lacked something in terms of real flavor - added baked chorizo to the left-overs the next day and it was just gorgeous. Also think the cheese adds nothing much to the mash.

    Loved it! So tasty just with sausages, mash was too much as well. Had some left over so blitzed it and made a hearty soup out of it for lunch the next day, just thinned it down with some water

    Made this as part of a Halloween buffet for a couple of vegetarian guests, put sausages out separate for the meat eaters. Added a stick of celery, extra garlic and a pinch of chilli flakes for added flavour, kept it warm in the slowcooker. It was a big hit, my sister in law was very happy to take home the small amount that was left.

    Made this last night for dinner, used strongbow as i had some in the fridge and cooked off some sausages which I added at the end, put the whole lot in an oven dish topped it with the mash (I did sweet potato mash) topped with cheese and put in the oven to brown off, it was amazing, well worth a try. Easy to make and so very tasty. By the way i got the can of flageolet beans in tesco's.

    Found this easy to make and the cider gave an interesting and different flavour to what is basically a Bean and Veg soup. Without the sausage I found it to be a bit thin and lacking some punch but my son-in-law gave it the thumbs up. In spite of my reservations this is a great low fat, high fibre and healthy meal and I will make it again making some additions until it packs the punch I want.

    This was nice; I added some cauliflower, peas and sweetcorn as I didn't have any butter beans. Being a non-drinker, I missed out the cider and used more stock. Next time I think it would be better to add the beans towards the end of the cooking time as they got a bit mushy. I did cook it for longer than stated though as it was a bit runny. The mash was ok, but I prefer mashed potatoes with some mustard stirred through.

    I love this Stew! The Cider really makes it gorgeous - I haven't tried the mash yet. I just use whatever mixed beans I can find, and it's always lovely.

    Really tasty and healthy, and very filling! I didn't add any cider, I put in a bit more stock instead, and had it with plain mash, no cheese or parsley, and it was delicious! Still have some left over for lunch tomorrow.
