Somerset stew with cheddar & parsley mash

This family winter warmer is full of flavour and goodness. Adapt for meat lovers by adding sausages

Method

  1. Heat oil in a large pan and fry the onion, garlic, carrot and leek until soft but not coloured. Add the tomato purée, chopped tomatoes, butter beans, flageolet beans, cider, stock and thyme and simmer for 15-20 mins until the stew has thickened and the veg are tender.
  2. Meanwhile, if you're adding sausages to any portion, snip each sausage into 3-4 chunks. Heat the olive oil in a frying pan and brown the chunks for 5 mins, then stir in appropriate portions of the stew and gently simmer for the remaining cooking time. Serve with the mash.
Try

Cheddar & parsley mash

Peel 850g potatoes, cut into chunks, and boil in salted water for 15 mins or so until tender. Drain, return to the pan and mash with a splash of milk, 25g butter, 75g extra-mature grated cheddar and a handful of chopped parsley. Season. If you like, put the mash in a heatproof dish, dot with butter and place under grill for a few mins for a golden and crisp finish.

    Tried this last night and it was delicious! couldn't find flageolet beans so used borlotti instead. I added cooked turkey sausages and served with jacket spuds, yummy!!

    A very nice meal. I used cannellini beans instead of butter beans as already had a tin in the cupboard and I put chives in the mash instead of parsley as I hate parsley with a vengeance!

    This was delicious though the cheese left a bit of a coating on your teeth - will probably make it with plain mashed potato or even brown rice next time.

    Made the stew and the mash and it was delicious. Tasted even better the next day with the leftovers.. particularly like the taste from the cider but I also shoved in some more garlic. Lovely.

    I loved this stew - the cider makes all the difference. I added a bay leaf and used soya beans as I didn't have any flageolet. It was really tasty and very easy.

    Healthy, easy and generally available "store cupboard" ingredients which is great. I feel the stew lacks something - will try adding a bay leaf for some "depth" next time.

    I cooked this as part of my mother's day meal as I had a mixture of meat and non-meat eaters. Cooked it with the herbed crusted pork fillet recipe off of this site and used it as a sauce, and the non meat eater had it as a main course and thoroughly enjoyed it. Would make it again for myself as it was delicious.

  • 1 tbsp oil

  • few sprigs thyme , leaves only
