Tomato & chickpea bake

Method

  1. Heat oven to 200C/180C fan/gas 6. Fry the aubergine and onion in the oil in a large pan for about 5 mins until softened and lightly coloured. Add the garlic, canned tomatoes, ½ can of water, 1 tsp oregano and a little pepper. Bring to the boil, then simmer for 10 mins. Stir in the cherry tomatoes and chickpeas for the final 2 mins cooking.
  2. Spoon into a baking dish. Brush the bread with a little oil. Mix remaining oregano and Parmesan, then sprinkle over the bread. Sit the bread on top of the chickpea mix, then bake for 15-20 mins until crisp and golden. Scatter the basil over the top and serve with green veg or a salad on the side.

TIP

If you haven't got cherry tomatoes, simply chop up three ordinary tomatoes instead.

    It sure does look good. I do like meat though, so i think id add sausages cut into meatball size pieces and maybe also some bacon, cut into bit size pieces, id cook these before the onion stage, when cooked take out and set aside then continue with rest of recipe. Just before transferring into oven dish add back the sausages & bacon then pop in oven dish etc etc As for the toms i think id probably add about 125g (about half a punnet) I think i will be cooking this at the weekend, i will be back to comment on how it turned out. x

    Looks lovely, but definitely needs some meat! Like JOOLES's idea, but probably would use bacon - I only like that for breakfast!

    I didn't have all the ingredients and I have nothing in the fridge, so I just used onion, canned tomatoes, cherry tomatoes and chickpeas. I followed the recipe accordingly, but as I had no bread I didn't particuarly want to add the cheese. "My version" tasted fantastic! I couldn't stop eating it! I accompanied it with a salad, but it could go really well with pasta too. I will definetly try the recipe stated when I go back to the shop, and I'm sure it'll be just as delicious if not more due to the mix of vegetables. I added chilli sauce in mine to give it something extra, but as the others said, I think it would really go well with a bit of meat, personally I would suggest chorizo. I highly recommend this dish, you should all try it!

    i am cooking this as we speak, i agree with the meat comment, i have added chorizo to mine, cooked it with the onions and aubergine. it smells yummy. i didn't have any baguettes so i have added parmasan bread crumbs instead, i just blitzed a slice of bread in the food processer and have added the oregano, olive oil and parmasan to it, i will let youknow how it tastes.

    I didn't add the bread and just added cheese at the end. Used leek instead of onion. It's really simple to make but delicious. Will definitely make again!

    I have just made this and thought it was amazing. I am not a fan of Aubergine so I substituted this for Courgette. I also added some mushrooms and a few olives. I served it with a green salad as suggested. I probably made enough for four but me and my boyfriend managed to eat the lot. Really lovely dish and I will be doing this for my vegetarian mates very soon. Next time I wouldn't add so much water as I didn't think it needed it.

    I enjoyed this one, the toasted cheesy bread really lifted it. I served it with a greek salad with some crumbled feta on top which again lifted it. Great for a green day if you are following the slimming world diet!!

    My daughter who has a vegetarian boyfriend and doesn't supposedly like aubergine made this with my guidance since she is just finding her feet on the cooking front thanks to good food, and it turned out abosolutely wonderful. We enjoyed it very much, very tasty, we ate the lot. Didn't make any changes to the recipe at all, just ate the rest of the bread to mop up the juices. The boyfriend is now an aubergine convert.
