  1. Toss the chicken thighs in half the spices and a pinch of salt until completely coated. Heat 1 tbsp oil in a large sauté pan with a lid. Fry chicken, skin-side down, for 10 mins until golden brown, turn over, then cook for 2 mins before removing from the pan. Pour the rest of the oil into the pan, then fry the onions and garlic for 8 mins until golden. Stir in the rest of the spices, then cook for 1 min longer. Pour over the chicken stock and scatter in the olives. Bring everything to the boil, turn down the heat, then sit the chicken, skinside up, in the stock.

  2. Cover the pan with a lid, then simmer gently for 35-40 mins until the chicken is tender. Put the kettle on, then lift the chicken onto a plate and keep warm. Take the pan off the heat. Stir the lemon juice and couscous into the saucy onions in the pan and top up with enough boiling water just to cover the couscous if you need to. Place the lid back on the pan, then leave to stand for 5 mins until the couscous is cooked through. Fluff through half the parsley and the lemon zest, then sit the chicken on top. Scatter with the rest of the parsley and zest before serving.

this is a great recipe tried it out found it delicious added tbsp of spicy mango chutney at the end which gave it a bit more punch and left out the olives thanx

A good family meal, I left out the olives as the family are not keen. The only change i would make next time would be to cook the chicken separatley as the you lose the crunchy skin if you put it back in the pot.

I made this for the first time last week when my parents came over - it went down a treat! The chicken was really juicy and yummy and the flavours all worked really well together. Will definitely make this again!

Absolutely loved it! Whole family enjoyed it and was up to my standards :). I made a few amendments, as I never had any 'Turmeric Powder' or 'Garam Masala', I added salt, pepper and paprika to the chicken, which gave it a very nice taste to it it!

Thanks once again Barney it was so surprisingly delicious- well it wasn't surprising really, since all your recipes are a such great success in our house - I didn't use the zest but did add a preserved lemon - I also added a few tablespoons of the olive( w anchovy) brine to the stock. threw in a handful of apricots but the dish didn't really need them - just simply delicious made as per instructions above. When can we expect a cookbook from you?

Very good - clean plates. Added some sun dried tomatoes and a few green beans at the end, and kept some of the cooking liquid as a sauce. One to keep!

Most amazing dinner I have had! x Really lovely tender chicken and the olives made it oh so much yummier. To add more flavours, put in some green beans or chic peas ((like my mum and god-mother did)) x

Love this recipe, now have it about twice a week!. Not sure what to do with the olives though so don't bother!

Chicken was lovely, maybe the olives would have been better chopped into small slices as they were a bit over-powering whole.
