Sausages with creamy lentils

Update the great British banger with a side of creamy green lentils - a great storecupboard alternative to potatoes

Method

  1. Preheat the grill. Grill the sausages for 15-20 minutes, turning occasionally, until they are evenly browned and cooked through.
  2. Meanwhile, chop the onion, carrots and celery into small pieces. (A food processor can make short work of this.) Heat the sunflower oil in a medium pan. Fry the bacon for 2 minutes, then stir in the chopped vegetables and thyme. Cook over a medium heat for 8 minutes, stirring occasionally, until the vegetables have softened and are beginning to brown.
  3. Pour in the stock and simmer for 8 minutes until the carrots are tender. Drain the lentils, then stir into the vegetables. Heat through for a couple of minutes, then season and stir in the créme fraiche or cream. Serve with the grilled sausages.

    There is no information in this recipe as to how to cook the lentils. The first mention of them is to drain them and add them to the other cooked ingredients. I would like to cook this recipe but don't know how to do the lentils? please let me know by eamail or correct this recipe please. thank you Hazel

    A glass of red wine to deglaze the pan also adds a nice richness. I only made this because I had some dried lentils that were coming to their best before date, but I'm so glad I did. Goes well with salmon too

    Easy and quick to make. I didn't have bacon or créme fraiche, so I used chorizo and natural yoghurt and it still tasted good. Might be better with bacon though! It was tasy and filling, 3 of us shared it, but if I make it again I might make some sweet potato mash to go with it.

    Delicious! Currently, I've got a cold, so I had to add extra seasoning such as salt, pepper, smoked paprika, dried thyme and dried chives. I also used half-fat creme fraiche to reduce the evil - sooo good! Thyme makes everything taste properly homemade. Would suggestwaiting with grilling the sausages until the bacon is fried as the lentils can take a while before they soften.

    this is my go-to recipe when i have leftovers. So easy, tasty and filling. Have used half fat sausage and creme fraiche once or twice which is just as good but healthier.

    Lentils and sausages are a surprisingly tasty combination. It is a lovely mid-week meal especially on a cold, rainy evening. Will definitely try again, but this time with fresh thyme springs and a small glug of white wine.
