Sticky lemon chicken

This tasty, low-fat lemon chicken recipe has a Mediterranean feel and just four ingredients- chicken, lemon, thyme and honey

Method

  1. Preheat the grill to high and lightly oil a shallow heatproof dish. Put the chicken in the dish, skin side down, and season with salt and pepper. Grill for 5 minutes. While the chicken is grilling, cut four thin slices from the lemon.
  2. Turn the chicken fillets over and put a slice of lemon on top of each one. Sprinkle over the thyme and a little more seasoning, then drizzle with the honey. Squeeze over the juice from the remaining lemon and spoon round 2 tbsp water. Return to the grill for 10 minutes more, until the chicken is golden and cooked all the way through. Serve the chicken and the sticky juices with rice or potatoes and a green veg - broccoli or leeks are good.

    made this the other night and my husband absolutely loved it. I must say, for me, it ws nice but the flvour was really subtle and maybe I should have put in more honey..not sure but overall it was nice and easy and I will make it again only I will probably up the dose of honey and lemon

    For a mid week meal this was great! Even my 17 month old son enjoyed it. We served it with roasted sweet potato, squash and garlic and raw spinach and red pepper. Super Healthy!

    As a student, I used to make this a lot with dried thyme which is fine! Always turn to it when I have spare chicken.. Quick and easy to make, plus no lack of flavour!
