Rice noodles with sundried tomatoes, Parmesan & basil

A great gluten-free alternative to pasta. Look out for wheat-free soba noodles too

Method

  1. Prepare the noodles according to pack instructions, then drain. Heat the oil, then fry the tomatoes and garlic for 3 mins. Toss the noodles and most of the cheese and basil into the pan, season, then scatter over the remaining cheese and basil.

Rice noodles are available in Asian shops and larger supermarkets, either in straight-to-wok pouches or packs of dried noodles that need soaking before cooking.

    Don't feel this works at all with rice noodles- would probably work better with normal pasta but not very substantial or filling. Wouldn't make it again!

    Does anyone know where you can buy 100% rice noodles? Please be careful as rice noodles very often contain wheat and I've not been able to find any without it as yet

    Michelle, I found fresh rice noodles in Tesco in the fresh veg section. The ordinary noodles on the shelves all contained wheat.

    I loved this recipe and thought the sundried tomatoes with the fresh basil and parmesan worked really well. I also added a drop of chopped chillies to give it a kick. I got wheat free soba noodles from Tesco and it worked really well. As I had it for lunch, I thought it was filling enough. I will def make this again and both my husband and daughter enjoyed it.
