Chorizo hash with poached egg

A great-value supper for two, or try it for a spicy brunch

Method

  1. Boil the potatoes until tender, drain and cool. Heat 2 tbsp olive oil in a large non-stick frying pan and fry, turning over until golden and crisp. Add the chorizo and chilli and fry for another 3-4 minutes until chorizo is crisp. Season then stir through the parsley.
  2. Serve the potatoes topped with poached eggs.

    Was a little dissapointed with the basics of this recipe as it seemed a bit bland but we added some bacon and shallots in with the chorizo to beef it up a bit and it was delicious... will definately be making it again... however, the quantities listed are not for the hungry chef... victoria beckham maybe!

    Really cheap and easy recipe, with on hand ingredients in my house! Husband loved it! I bulked portions and used ingredients list as my basic. Fab, easy, cheap and delicious!

    This was a great recipe. Very easy to do with no complications. However, I'm glad I read the comments before cooking because the amount of ingredients did need to be doubled in the end. It made for a lovely mid-week meal. Would definately cook this again.

    Top notch. I'm having a post-Christmas calorie watch so was determined to be satisfied with the specified portion and cooked some mushrooms to bulk it up a little. Sadly, I agree with everyone else in that the portions are a bit stingy. If I was just being my normal greedy self, I'd've eaten both portions with a huge hunk of freshly buttered bread on the side. Simple store cupboard fare. Will become a staple.

    I added some chopped onions and a little soy and added the potatoes to the frying pan to mix it all up. I left the chilli out too. It was delicious!

    I picked the wrong weekend to try this, by the time i got to the supermarket they had sold out of red chilli's. I used a swet red pointed pepper instead and i served mine with a slice of gammon and watercress salad. (no poached egg) Plenty of flavour,from the chorizo,which i bought ready diced,quick and easy to make and can't wait to try it again.

    yum loved it but i did double quantity. also added bacon lardons and a few cherry toms i ha in fridge wen very will. my husband was disappointed when he went back for seconds and none there .

    loved this recipe.. every thing just goes together so well. great for a starter, and quick and easy to do if you pre-boil the spuds. will be having this again and again. in fact i'm going to cook it know.!!

    Loved this - posh egg and chips! I added mushrooms and had some bread with it and was full. Made my fella two poached eggs. I also added more chorizo.

    Decided to cook this when I woke up late one day, didn't want to have a breakfast but didn't want to wait another 2 hrs for lunch, this was a delicious 'brunch' throroughly enjoyed by my bf too, kept us going until dinner that evening.

    This evening I was very annoyed that the boyfriend got home and told me he had already eaten and was going to the gym. However, after whipping this up from bits that were in the fridge i'm happy again ;) Didn't have much chorizo so I threw in some king prawns too (nice with the egg) used dried crushed chilli's and sprinkled chives on top as didn't have parsley. Really good! The 5 stars i'm giving is for the an easy, quick, pretty much store cupboard meal. Plus congrats to me for making my first ever perfect poached egg *****

    Simply delicious! Made this for the family for lunch today, it was devoured. I increased the quantity of potatoe omitted the chilli as did not feel it was necessary. Was hoping to have leftovers in a salad tomorrow as suggested in a previous post, but there was none left!
