Chorizo hash with poached egg

Method

  1. Boil the potatoes until tender, drain and cool. Heat 2 tbsp olive oil in a large non-stick frying pan and fry, turning over until golden and crisp. Add the chorizo and chilli and fry for another 3-4 minutes until chorizo is crisp. Season then stir through the parsley.
  2. Serve the potatoes topped with poached eggs.

    Perfect light supper. I say light because the portions were a little small, this would probably be more accurately desribed as feeds one greedy person :) The oil from the chorizo added bags of flavour to the potatoes, so I left the chilli out.

    Agree with the first comment regarding the size of the portions. Found that if you increase the potatoes to 500g and double the chorizo then you will have enough for two. Very nice midweek meal - recommended.

    This was really tasty - we had it as a light supper dish, but I agree with the other comments, the quantities are way off - you definitely need to double to amount of potatoes and chorizo.

    This was delicious - however I would agree with previous posts that you would need double the amount to satisfy a healthy appetite as an evening meal with a side salad. Quick, easy and well worth the effort!

    Delicious! I took the good advice from previous posts to increase the quantities. This was a simple, tasty and slightly quirky evening meal thoroughly enjoyed by all.

    What a fantastic dish! This really did make my day, the chorizo adding an oily spice (i love the stuff so i used a load) to the egg. The only other thing i added was a good sprinkle of pine nuts that went in with the chorizo, everybody loved it! Personal preference but i use duck eggs as i think they make for a far superior poached egg as the yolks are a little bigger and richer. A crack of black pepper on the eggs and 5 stars! This dish hasn�t seen the last of me. As others have described the portion was going to be small so i doubled up on all but the egg. p.s. I used the remainder of the chorizo fried potato (chorizo taken out) in a potato salad the next day, with mayo and a Tbs full of Nandos hot sauce and black pepper... probably the best ive had to date.

    Poached egg and chorizo, a favourite in our home so this was a great quick supper! Like the idea of having it as a brunch on a lazy Sunday! Portion was small, so maybe two poached eggs each (naughty but nice).

    Very verrrrrrry good. I doubled up on everything, and it was enough to serve two adults and two toddlers for a light supper. Oh, and I also omited the chilli to make it child friendly, but it was still very flavourful.
