Caramelised red onion & blue cheese pasta

Method

  1. Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.
  2. Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.

    This is delicious! I'm not even a huge blue cheese fan but absolutely love this recipe. I added some grilled bacon and used chopped pecans instead of pine nuts and my other half couldn't get enough of it. Have made it twice already and will def be making it again.

    Loved this recipe, very quick and easy, although I did add some smoked bacon as previously suggested and also some cherry tomatoes. Excellent will definitely be making this again.

    Divine! Really let my onions caramelise down over the course of an hour or so on a very very low heat and they were just gorgeous. I used St Agur Spreadable blue cheese and melted it into the pasta along with a slug of the pasta water before stirring through the onions and sprinkling with the pine nuts (which were, in mine and the hubby's opinion, essential for the crunch factor). Yum!

    Quick and easy dish. A perfect meal to make after a hard day at work. I added a little more sugar to the onions and like someone else used pecans instead of pine nuts. I'll definitely be making this again.
