Caramelised red onion & blue cheese pasta

- Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.
- Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.
