Creamy pesto chicken with roasted tomatoes

Method

  1. Heat oven to 200C/fan 180C/gas 6. Use a small sharp knife to make a slit along the side of each chicken breast to form a pocket. Mix together the pesto and mascarpone, then carefully spoon a quarter of the mixture into each chicken breast and smooth over the opening to seal.
  2. Brush a little oil, about 1 tsp, all over each chicken breast and season well. Tip the breadcrumbs onto a large plate and season. Place each breast on the plate and press all over with the breadcrumbs. Place in a lightly oiled shallow baking dish along with the tomatoes (kept together on the vine in a couple of bunches). Drizzle over the remaining oil.
  3. Cook in the oven for 20-25 mins until the chicken starts to turn golden and is cooked through. Scatter over the pine nuts and cook for 2 mins more. Sprinkle with basil leaves and serve with new potatoes or crusty bread.

HOMEMADE PESTO

In a small food processor, whizz together a large handful basil leaves (about 40g), 25g toasted pine nuts, 25g finely grated Parmesan, 1 crushed garlic clove and 3 tbsp olive oil. Keep in the fridge for 1-2 days or cover with a layer of oil and keep for 3-4 days.

    Loved this. Have made it a few times now. I use shop bought pesto to save time and I also just use normal cherry tomatoes because they are cheaper. We use wholegrain bread to make our own breadcrumbs. Delicious!

    Made this for my boyfriend and he loved it! I used shop bought Pesto as is much cheaper and served with tagliatelle with a tomato sauce. The cherry tomatoes definitely make the dish perfect, was very nice. I will try with light Philly next time.

    Great recipe, only reason I didnt give it 5 stars was because I wrapped the chicken in pancetta and used low fat philly. Also added a bit of garlic and chilli. Roasted plenty of tomatoes, mainly as we presently have a glut!! Will deffo make again.

    Really nice. Easy to make, has to b mascarpone for me Philly too sweet. Used shop bought pesto and couldn't find pine nuts at tesco. I put some of the creamy pesto on top of the chicken b4 putting on breadcrumbs. Very tasty and will make again.

    My daughter declared she was cooking dinner, first time for everything! Picked this for her and to be fair she did very well and served a very edible dish. This was quick and simple to do and very tasty.

    really easy and looks impressive considering the short time it takes! will definitely be making it again. used ready made pesto and creme fraiche and turned out great. 25 minutes was perfect timing too.

    Just made this tonight and used ready made sundried tomato pesto and light cream cheese. Also used sunflower and pumpkin seeds as had no pinenuts. It turned out perfectly and I will definitely make again as it was very easy and only a few dishes were used so there was not much to clean up.

    I love this recipe! I tried it out on my husband for dinner during the week and loved it so much I'm making it for a dinner party tonight. It's so simple and easy to make. I had extra pesto left over which I had with pasta the next day for lunch. Even the pesto recipe is so easily made I will never buy a jar of pesto again.
