Roasted herby mushrooms

No more soggy mushrooms - roasting them gets rid of the liquid and brings out all the flavour

Method

  1. Heat oven to 200C/180C fan/gas 6. Arrange the mushrooms in a roasting tray in a single layer, then cook for 15 mins. Meanwhile, mix the garlic, rosemary, olive oil and vinegar with some seasoning. Remove mushrooms and pour away any liquid, then toss in the oil and herb mix. Return to the oven for 10-15 mins more until tender. Scatter with the parsley before serving.

    Really easy and tasted delicious. Our mushrooms were quite small and were very very well done so next time i will keep an eye on them a bit more. They were still great though.

    Great, apart from the vinegar! It takes away rather than adds to the flavour, to my mind. I used Herbes de Provence ( dried) as I had no fresh rosemary. After eating the mushrooms, I went for a walk, and found myself so tired I could hardly drag my feet over the ground. When I came home, I was stumbling and fumbling, so went to bed and slept about an hour. Most odd for me, I am not a daytime napper. I wondered what had got into me, but a bit of googling reveals that it may have been the tryptophan content of the mushrooms. I shall go easy on them in future.
