Sticky pork with cranberries

Use up leftover Christmas cranberry sauce in this quick pork braise, lovely with a dollop of mash

Method

  1. Season the flour and dust the pork slices. Heat the oil in a large frying pan, then cook the pork for 3-4 mins each side until browned and cooked through. Transfer to a plate and set aside.
  2. Add the red onion wedges to the pan and fry for 5-8 mins until soft and starting to turn golden. Stir in the stock, cranberry sauce and honey and simmer for 10 mins. Return the pork with any resting juices and gently cook for 1-2 mins until hot through. Serve with some mash or jacket potatoes and vegetables.
Try

Make it with beef

Use 500g sliced rump steak instead of the pork and white onions instead of red. Then stir through 2-3 tbsp of horseradish sauce instead of the cranberry sauce.

    Made this with the leftover (homemade) cranberry sauce from Christmas and potato and swede mash. The sauce was lovely and sticky, not too sweet, and complemented the pork beautifully. And so easy to make! Will definitely make this again.

    Made this with a lovely piece of pork loin that happen to defrost with a power cut and i needed a quick and very easy recipe. This is so lovely although sweet, a small amount of salt and pepper can even it off, served it with boiled rice. I would make this again. Yummy!!!

    YUM YUM! Made with pork steaks for hubby and quorn fillets for me. Added a splash of red wine, but otherwise followed recipe as it was and really enjoyed. Made it with the "winter root veg mash with crispy topping" recipe from this site. Delicious! Will definitely make again.

    Made this a few times now. Substituted tenderloin for pork steaks sliced up and bashed thinner. Have also used redcurrant jelly instead of cranberry and was still lovely but didn't need the honey

    I thought this was awful I had some lovely pork medallions to use too.. I don't think I did anything wrong but felt that there was too much stock. I will not be trying this again, but if I did I would make the sauce thicker. Also I didn't like the onions in quarters it looked wrong.

    Superb sauce which I'll make again but pork was chewy. If I try cooking it again I will bash the steaks as someone else has done.
