  • 200g peas, defrosted
  • 250g ham, shredded
  • 2 Little Gem lettuces, leaves separated
  • bunch spring onions, sliced
  • 300g cooked new potatoes, sliced
  • small bunch mint, roughly chopped
  • 150ml natural yogurt
  • 1 tsp sugar

Cook peas in boiling water for 1 min. Drain and rinse under cold water. Toss with ham, leaves, spring onions, potatoes and two-thirds of mint. Mix remaining mint with yogurt and sugar. Drizzle over salad.

This went down very well with a group of friends here in Spain. I added a bit of olive oil to the dressing and also to the salad before drizzling over the yogurt. Very light and original

Wow, went down with rave reviews as part of a buffet. Very easy to make and looked as good as picture. Would certainly use again and again.

Excellent! Did it for NY Eve lunch. Didn't have mint or yoghurt, so used mayo. Very much admired. Doing it again Friday. Can't seem to be able to give it the 5 * I want to.

Underwhelmed by this one - i took it to a buffet and although people ate it nobody said that it was nice and it didn't really look that good - wouldn't take to a party again. It was fine as 'everyday' food the next day though and i did like the yogurt and mint dressing.

I have cooked this before and everyone loved it! Im making this tonight. Im going to add some green beans to bulk it out and the addition of some whole grain mustard and dijon mustard mixed into the yogurt instead of mint.

Have just made this without the peas as I forgot to get them and used mayo instead of yogurt. Taste test is good, hope the family enjoy it tomorrow for our Mother's Day buffet.

The family really enjoyed this dish, so I will be making it again perhaps with the addition of cherry toms?
