Easy ratatouille with poached eggs

This gutsy one-pot can mostly be prepared in advance - just crack in the eggs at the end

Method

  1. Heat the oil in a large frying pan. Add the onion, pepper, garlic and rosemary, then cook for 5 mins, stirring frequently, until the onion has softened. Add the aubergine and courgettes, then cook for 2 mins more.
  2. Add the tomatoes, then fill the can with water, swirl it around and tip into the pan. Bring to the boil, cover, then simmer for 40 mins, uncovering after 20 mins, until reduced and pulpy.
  3. Stir the vinegar into the ratatouille, then make 4 spaces for the eggs. Crack an egg into each hole and season with black pepper. Cover, then cook for 2-5 mins until set as softly or firmly as you like. Scatter over the basil and serve with some crusty bread to mop up the juices.

    Loads of flavour - I'd make this one again. I wasn't sure about the eggs at first, but they are a really nice addition!

    Every body loved this version of Ratatouille. It was very nice with the egge, like a north african omlett. Lots colors and flavour, I will make that again.

    Quick and easy to make, lovely variety of flavours. Good bread for mopping up is a must, I added more eggs, they really go well together.

    this was a really lovely ratatouille and the eggs were a great addition. as i made it for just two of us i meant to halve the recipe but in reality just missed out one of the courgettes and two of the eggs... i think that next time an extra egg apiece wouldn't go amiss! warm crusty bread is essential.

    We thought this dish was alright. Simple to make and obviously very healthy, not very exiting though. Something simple for weekdays. We also had two eggs per person, one is not enough if this is the only course.

    I followed the recipe almost exactly (except for chopping my own tomatoes; I hate canned chopped tomatoes), but didn't even get to the egg-cracking stage. It was the most disgusting looking, disgusting smelling, mass of brown pulped vegetables I have ever seen; I tried a little and it was flavourless with a horrible texture. I don't know why this got so many positive comments; I ended up throwing it away and having scrambled eggs instead (also, it made a horrible mess of my pan).

    I have to agree with Wildbluesun - this was an awful recipe and not deserving of being placed in the Best Recipes booklet. It was a horrible colour, texture and the flavour was bland. I used beautiful fresh organic veggies and eggs and really resented throwing them away because the only thing that tasted good was the crusty baguette.

    was nice-nothing special though. I made it for two instead and even skimped out on the corgette and aubergine and there did not seam to be much toms?maybe just had th eheat to high?

    I made this last night and we both really liked it. Nice vibrant colours and flavours. It was just for two people so I was only going to make 2 eggs but after reading some of the comments I thought I'd make three to be on the safe side and I'm glad I did, we could have easily gone for 4, so if this is your main meal I'd say make 2 eggs each. Would definitely make again!
