Ingredients

  • 150g pot low-fat natural yogurt

  • 2 tbsp hot curry paste
  • 4 boneless, skinless chicken breast, cubed
  • 250g pack cherry tomatoes
  • 4 wholemeal chapati, warmed, to serve

For the cucumber salad

  • ½ cucumber, halved lengthways, deseeded and sliced
  • 1 red onion, thinly sliced
  • handful chopped coriander leaves
  • juice 1 lemon

Method

  1. Put 8 wooden skewers in a bowl of water to soak. Mix the yogurt and curry paste together in a bowl, then add the chicken (if you have time, marinate for an hr or so). In a large bowl, toss together the cucumber, red onion, coriander and lemon juice. Chill until ready to serve.

  2. Shake off any excess marinade, then thread the chicken pieces and cherry tomatoes onto the pre-soaked skewers. Cook under a medium grill for 15-20 mins, turning from time to time, until cooked through and nicely browned.

  3. Stir the lettuce or pea shoots into the salad, then divide between 4 plates. Top each serving with 2 chicken tikka skewers and serve with the warm chapatis.

I've just made this for dinner and it was so easy and so tasty! . I put chilli flakes on the salad and made a yogurt and mint dip. With a side dish of pilau rice.
It went down a storm.

I use Pataks Tikka Masala Spice paste, add 1x finely chopped red onion, coconut yoghurt (not the low fat stuff), add a teaspoon of ground cumin, a squirt of lemon juice and let the meat marinate for several hours. Alternate the meat with red onion wedges on skewers, place on a medium hot BBQ and the result is absolutely storming!

Easy to make and very tasty. Not all of the yoghurt is needed, though. Will be using red onion and sweet pepper on the skewers next time. Very nice with the chapatis, although I might make my own next time.

These were so simple to make and tasted delicious! Had a few left over and have them for my lunch today! Will definitely be making these again! Fab healthy meal!

Made these for a casual dinner party last night, also made the lamb, coconut and mango pilau on this site, went down really well with my guests, they even took some home in a doggy bag, the kebabs tasted much better than shop bought ones, will definitely be making these again, they'd be great on a BBQ too.

Made this for tea for the 4 of us few weeks ago and went down a storm although a little tricky to grill I found.

Then last night did a bbq dinner party and served these up for starters - they were a big hit and I was asked for the receipe by everyone - even the cuecumber salad got rave reviews - no one could believe how simple it was to make!

Used the 'Making your own curry paste' from the Chicken tikka masala recipe on this site. Flavour was fantastic & the chicken very tender. Definately my new bbq favourite!

I made this for a bbq, it went down a treat! i had enough time to marinade in fride for a couple of hours before putting onto skewers and cooking, which made the chicken meltingly tender! will be making again.

Tried this last night, although used 1/2 fat creme fraiche instead of the yoghurt, as that was what I had in the fridge. Was lovely!!

Re the CHICKEN TIKKA KEBABS, could I use the left over marinade (yoghurt and curry) as a side sauce after having heated it thoroughly?
