Chicken tikka skewers

This breezy dish is perfect for the grill or barbecue - and it's low-calorie too

Method

  1. Put 8 wooden skewers in a bowl of water to soak. Mix the yogurt and curry paste together in a bowl, then add the chicken (if you have time, marinate for an hr or so). In a large bowl, toss together the cucumber, red onion, coriander and lemon juice. Chill until ready to serve.
  2. Shake off any excess marinade, then thread the chicken pieces and cherry tomatoes onto the pre-soaked skewers. Cook under a medium grill for 15-20 mins, turning from time to time, until cooked through and nicely browned.
  3. Stir the lettuce or pea shoots into the salad, then divide between 4 plates. Top each serving with 2 chicken tikka skewers and serve with the warm chapatis.

    These are great - particularly when dieting, you can still get a really nice taste of curry without the exorbitant calories! For subscribers to the magazine, try the potato mamoosa as a side dish from the vegetarian section, i'm not sure if its on the side yet, but its a brilliant change from rice.

    Gogeous and really easy to make. To the marinade i added Madras paste as its hotter, a whole red chiili, taking out the seeds and fresh mint leaves, i left it all to marinade for two days and two nights, came out lovely. With the above salad i served with the suggested Chapatis, lovely lovely lovely, will defefnitly make again. Although i used Madras paste and a red chilli it was still suprisingly mild, but beautifully flavoured. x

    We (2 adults, 3 teenagers) loved these. I marinated the chicken before I went to work so it was really quick & easy to put together in the evening. The salad was lovely too. Next time I'll do basmati rice rather than the chapatti.

    Very good midweek meal - quick and easy. Couldn't find chapatis so used wraps instead - very good. Also did a vegetarian alternative using halloumi cheese instead of chicken and it worked very well.

    This was very tasty and easy to make...the salad was yum too! I only had Balti curry paste so I used that and it worked out just fine. Will definitely make again.

    I loved this. It tastes amazing. I really enjoy the chicken but especially the salad. The coriander really added to the taste. delicious!

    This recipe was delicious. It was so easy to do yet so tasty. I marinated the chicken all day. Once I had used all the chicken up, I heated the remaining marinade and used it as a dip for the chappatis. I will recommend it and will make it again.
